I was asked to take over the kitchen of Lumi at the beginning of February 2022 in Verbier after the previous chef left due to over bearing hours. I hadn’t run a restaurant kitchen for ten years, so it was a long first few weeks getting to grips with during one of the busiest periods of the season. As its location is opposite the main lift station its very popular as an après bar with live music most nights.

Taking this into consideration, I cut the menus down simplifying service with the ethos that if someone else takes over it is doable. Burgers were a staple requirement. Adding my famous fried chicken and kimchi burger which has become the number 1 seller.

I also curated an easy to eat pie, weekly fish dish– squid being my favourite, a poutine and just tried to get the kitchen running smoothly.

Small changes to the menu continue today… trying to run stocks down before closing end of April.
